Description

The chalky clay soil around Carpino is perfect for cultivating fava beans, and one of the best varieties in all of Apulia is grown here.

Small and dimpled, Carpino fava beans are green when harvested, becoming sandy white over time. Tender, flavorful and highly nutritious, they are traditionally cooked in terracotta pots over a low open fire.
