Capers are the unopened flower buds of the caper plant. This plant grows spontaneously everywhere in Puglia and the Mediterranean Sea area.
Capers are harvested manually. This is a very labor intensive. After the harvesting they are dried in the sun and sorted by size.
These capers come from the Natural reserve of Torre Guaceto like the other products of Calemone.
Capers are always pickled in salt, water and salt (salamoia).
